Preparation

Prepare
  1. Peel the potatoes and cut into 4 cm cubes. Boil in salted water until soft.
  2. Temper the steaks, remove from the packaging, pat dry to remove excess moisture.
  3. Peel the large onions for the sauce and cut into thin strips.
    Fry them slowly in a pan with a little oil until they are golden brown.
    Deglaze with the red wine and reduce to 1/3. Pour in water until everything is covered, add the bay leaf and simmer for approx. 45 mins. Pass through a sieve.

  1. Allow the jus to reduce until the flavor intensifies
    and takes on a nice deep brown color. Mix the cornflour with a little cold water and thicken the sauce with it until it has a nice consistency. Finally, add a small knob of vegan butter. Season the sauce to taste with salt and pepper.
  2. Season the steak generously on both sides with salt and pepper
    and brush with a little vegetable oil.
  3. Preheat the oven to 180°C and place the steaks on a baking tray
    in the oven for about 10 minutes. Open the oven door and leave the steaks to rest for a few minutes.
  4. Pass the potatoes through a sieve and leave to evaporate for 2 minutes.
  5. Heat the vegan cream. Add it to the potatoes together with the butter. Stir the puree until smooth. Season with salt and mace.
  6. Cut the shallots into small cubes and place in a pan with a little butter. Add the carrots to the pan and toss in the hot butter for a minute. Season with salt and a pinch of sugar. Add the

  7. For the onion rings, peel the onion and cut into fine rings. Mix the flour and paprika powder and roll the sliced onion rings in it. Heat the oil in a frying pan to 160°C and fry the onion rings until golden brown, stirring constantly.
  8. Remove the crispy fried onions from the pan, pat dry and serve.
  9. Heat 1 tablespoon of butter with the crushed garlic clove until the butter foams.
