Preparation

Potato dumplings
  1. Peel and mash the large boiled potatoes. Mix the mashed potatoes with potato starch and salt in a bowl.
  2. Form small dumplings from the mixture and cook in boiling salted water for about 15-20 minutes until they rise and are firm.
  3. Remove the dumplings from the water and drain.
Red cabbage
  1. Cut into fine strips. Finely dice the onions and fry in oil. Add the red cabbage and fry briefly. Now deglaze the red cabbage with apple juice and red wine.
  2. Add spices:
    Bay leaves, cloves, sugar, salt, pepper. Cover and simmer the red cabbage on a low heat for about 1.5 hours until soft. Season to taste with vinegar and sugar. Remove the cloves and bay leaves.

  1. Fry the planted.duck in a pan over a medium heat with vegetable oil. Make sure that the product is lightly browned but not burnt.
  2. Then mix the planted.duck with the sauce. Serve and garnish with cranberry chutney.
